Paneer Stuffed fried Idlis with red chili sauce

From North to south, from East to west, India has got variety of taste. North Indian cuisine is famous for stuffing, gravies and lots of makhan and ghee, In South use of spices and rice moderation recipes can be seen, West Indian cuisines filled with lots of roasting, frying and all those tadkas, whereas in East India simplicity is the key included steaming and frying with different kind of sauces. Curiosity deepens here, what if we mingle all these cuisine making techniques from different zones and you never know what taste you will get. That's what I did here. I took idli from south, filled it with punjabi paneer stuffing, fried it like they did in gujrat, and serve it with red-hot chili sauce from east.And see what I got.

Fusion dish : a perfect blend of North South East West India. 

Paneer Stuffed Fried Idlis with red-chili sauce


Ingredients for Idli:

Rice idli batter
150 gm Cottage cheese
1 fine chopped onion
2 fine chopped green chili
Salt as per taste
Cumin powder half table spoon
Red chili powder half table spoon
Black pepper powder half table spoon
Oil for deep frying the idlis
Green chili, coriander leaf, cheese for garnishing.



Method:

Mash the cheese in a bowl, add onion, green chilies, salt, cumin powder, red chili powder, black pepper powder and mix well.This will be a filling for the idlis.
Grease the Idli steaming mold tray with little amount of oil and pour half spoon of idli batter in it.
Add  paneer filling in the middle of poured batter.
Pour some more amount of batter over the filling so that it covers completely.
After filling all the tray in the same manner, put it in a idli steaming vessel.
Keep it for 10-15 mins.
After that take out all the idlis from mould.
Now heat up the oil in a deep frying pan, fry all the idlis till golden brown.
Idlis are ready to serve, cut in to pieces or keep them as it is as per your choice.
Garnish them with green chilies, coriander leafs and paneer pieces.
You can also serve it with hot samber.




Paneer Stuffed Fried Idlis tastes real yummy and it includes the complete flavor from North-South-East-West India. it can be a awesome snack for parties. 

Ingredients for Red chili sauce:

100 gm of garlic cloves
25 dried red chilies
1 tbs sugar
1 cup malt vinegar 
2 tbs refined oil
salt as per taste

Method:

Peel off garlic cloves
Soak red chilies in vinegar from 1 hour
Now grind all the ingredients together in a mixer
Make a fine paste.
red chili sauce is ready to serve.

PEPSI

Mouth watering isn't it!!!!!

Ingredients:


6-8 Gol gappas
Sonth chutney
beaten curd
boiled potato, cut in to pieces 
red chili powder
salt
cumin powder

Method:

  • Take all the gol gappas in a plate and put potato pieces in all the gappas 
  • Pour beaten curd on all the gappas
  • now add sonth over 
  • Sprinkle salt, cumin powder,red chili powder over and serve

Loki Damas

It's a tasty, an appetizing snack, which can be eaten with your normal, Daal-chawal in lunch. I have never thought loki (bottle gourd) can be eaten in such a amazing manner.







Ingrdients:

1 medium size Loki (bottle gourd)
Gram flour half bowl
Ajwain (carom seed) half table spoon
Red chili powder as per taste
Salt as per taste
Garam masala
Water

Method:

  • Take a gram flour and add ajwain, red chili powder,salt, garam masala
  • Now by adding little water make a light paste of it.
  • Now peel off the Loki and cut in to round pieces.
  • Dip loki pieces in to gram flour paste
  • Heat up the oil in a pan for deep frying, add loki pieces in oil and deep fry it.
  • Take them out on kitchen towel and let it cool n serve.

Today in evening snack

This is my another favorite snack, which I can have any hour of a day...because of two reason, 1) I love idlis, 2) I love snack...so mix them both and make out something very tasty.

Fried Idlis......







Ingredients:

Steamed Idlies 6
Butter 2 spoons
Mustard seeds 1 spoon
Black pepper powder
Salt as per taste 
Coriander chopped leafs 2 spoons


Method:

  • Take a pan, heat it and add 2 spoons of butter in it.
  • Cut the steamed idlies in to four pieces of each.
  • Add a spoon of mustard seeds in a pan, let it pop.
  • Now add the idlies, stir well.
  • Now sprinkle some black pepper powder and salt.
  • Mix well and place it in a serving bowl, garnish with chopped coriander leafs and serve.

Sunday Special !

Today what I had in lunch.....is what I really wanted to have for last 2 days.I finally gave up thinking of it in my brain and bring it out straight on to my plate......'Moong Ki daal ka cheela'

As I have mention this before on this blog that I love snacks n this what anyone can have in breakfast or evening 7 pm snack time.The best part of cooking is that, there nothing any hard n fast rule to cook any dish in a conventional way, you can add some twist, fusion to it at any step.

Moong ki daal ka cheela is very popular authentic north Indian snack....which is usually eaten with chutneys or raita.






Ingredients:

Split moong dal 500gms pre-soaked overnight in 2-3 glass of water.
1 spoon cumin seeds.
Pinch of Asafoetida/hing
Salt as per taste

For filling:

4 boiled potatos or you can take 250 gms of paneer.
1 spoon of finely chopped green chilies.
Half bowl of finely chopped coriander
Salt as per taste
Bowl of namkeen save or bhujia

Method: For chilla filling:

  • Take a khadayi pan, heat it add 2 spoons of oil.
  • Add mustard seeds,1spoon haldi, spoon of coriander powder and red chilli powder to it.
  • Quickly add boiled potatoes slightly mashed in it.
  • Saute it well, add salt as per taste.
  • Add chopped coriander,green chilies and mix it well.

For Chilla/ pan-cakes

  • Take overnight soaked moong dal in a grinder, drain excess of water.
  • Add cumin seeds,salt,asafoetida in it and grind it finely.
  • Take out the paste in a bowl and adjust the consistency by adding water, keep it medium like dosa.
  • Heat the flate pan, grease it with some oil.
  • Pour a ladle full of chilla paste over and spread it evenly.
  • Let it roast properly, slightly golden brown then toss it to other side.
  • Toss it again now, place a spoon full of filling over the chilla, sprinkle some namkeen save on top.
  • Now fold the chilla from both side and it's ready to serve.

[Tips] In case you don't have overnight soaked dal then you can soak dal in slightly warm water or microwave it for 2-3 min and keep it for 1-2 hrs.

Chilly Chana

It include frying of chick pea, Honestly, I have never thought of it, I have always cooked chick pea in conventional way (chole chawal), Once my mom had told me about this snack. Though, I have tried falafel from chick pea, which was awesome.

So, here's the Chilly Chana.


Ingredients:

Boiled chick pea 2 cup (soaked overnight, boil in the morning.)
1 large onion, cut in to pieces.
1 Capsicum cut in to pieces.
Salt as per taste.
Soy sauce 2 spoons
Green chili sauce 1 spoon
Tomato sauce, as per your taste.
Cucumber chopped.

Method:   

  • First of all deep fry boiled chick pea, keep aside on kitchen towel.
  • Now heat a pan, put 2 spoons of oil, fry onion till transparent, add salt.
  • Add capsicum, fry it till soften.
  • Now add fried chick peas in it and saute it.
  • Add 2 spoons of soy sauce, green chili sauce,tomato sauce and again saute it properly.
  • Place it in a serving bowl/plate, now garnish with chopped cucumber and serve hot.

Banana surprise

This recipe I saw on a cookery show and the main ingredient was the raw banana.That was the bingo moment for me coz for many days I was looking to make something attractive by using raw banana, I did some changes in the original recipe and herez the out come, hope you like it, if you do ...then plz leave ur kind comment 





Ingredients:

2 Raw bananas boiled.
Half bowl roasted Peanuts (un-skinned)
2 slice of Bread crumbs
Salt as per taste
Chopped Green chilies 1 spoon
Chopped coriander 1 spoon
Half bowl Postadana (Khaskhas)/ Poppy seeds



Method: 

  • Mash the boiled banana in a bowl, add green chilies, coriander,salt, bread crumbs and mix it well.
  • Take a little paste in your hand n roll it,fill the balls with some roasted peanuts in the middle.
  • Roll out completely in balls or small patties.
  • Heat the oil in a pan for deep frying.
  • Now take each ball roll it on postadana and put it in the pan for frying.
  • Fry it it golden brown, serve hot with green chutney, sauce or any other dips.

Falafel

Falafel....sound interesting isn't it...well this snack is interesting too...Basically Falafel is famous in Middle Eastern countries as a local snack served with pita bread and some other serving just like a burger. In Egypt McDonald's has their special version of a falafel sandwich which is named as Mcfalafel.....

Now here is my tried falafel........

Falafel 


Ingredients:

1 cup chick pea (soaked overnight in water and boiled properly or pressure cooked)
1 large onion chopped
2 cloves of garlic chopped
1 green chili chopped
1 spoon of chopped coriander
3 spoon of chopped parsley 
2 spoons of all purpose flour (maida)
salt as per taste
Half table spoon cumin powder


Method: 

  • Take a boiled chick pea in a grinder and add onion,garlic,green chili, grind it but not finely.
  • Now add coriander, parsley, maida, salt, cumin powder in to a grind ed mixture
  • Make small patties or balls out of it 
  • Deep fry in oil until golden brown and serve hot with chutney.

Turning in to Foodie - Snacks-1

No doubt these days I'm in love with cooking and eating food...and that's why my blog have partially turned in to a food blog...last to last week my breakfast marathon got hit.....so I decided why not to nourish my new passion for food all over again...well this time it's not a marathon but I'll try my best to post daily...this time I will be posting some of my all time favorite snacks, party snacks, small eats,tidbit...etc...etc...etc..I love snacks more than a meal.


So here is my first snack post........

Chane ki daal k Pakore with raw mango chutney



Cooking  level: Easy
Category:evening snack, party snack
Preparation time:15 min 

Ingredients: for pakoras

Chana daal : 1 cup  pre-soaked in water for half n hour before cooking (If you have less time then you can microwave daal in water for 1 min and keep it for 10-15 min aside.)
1 Onion chopped
1 or2 Green chilies chopped
Salt as per taste
Oil for deep frying

Method :

  • First of all grand chana ki daal in a grander but not very fine, keep the consistency lil thick.
  • Add chopped onions, green chiilies, salt and mix well.
  • Now heat the deep fry pan add oil in it (health conscious can use olive oil)
  • Add slowly small parts of the mix in to the oil same like you make besan ka pakoras, fry it till golden brown.
  • serve hot with chutney or tomato sauce.

Ingredients: for Raw mango chutney


1 Raw mango medium size
200gms of coriander leaves
1 green chili
1 big tomato
Black-salt half table spoon
Roasted cumin powder-1 spoon




Method:

  • Peel the raw mango, cut it in to small pieces, discard the seed 
  • Take a grander put the mango pieces in along with coriander leaves,green chili, toamato.
  • Grand it till fine.
  • Add black-salt and cumin powder and mix well.

 You can also serve these pakoras with curd , chutney, red chili powder, salt and cumin powder sprinkled over it

Everyday Breakfast Week-Day 7

Ahan! today is the last day of my marathon week of breakfast and m feeling so glad to say that I have completed it successfully...it's a "I would like to thanks" moment for so definitely my thanks goes to everyone who likes and appreciated my blog...you guyz boosted up my confidence and feeling great today...big smile :)

So here I 'm with my 7th day breakfast recipe....before reveling it..I would like to give the credits of this recipe to my lovely, charming sister-in-law (Renu bhabi) who is like a elder sister to me...she makes yummy! breakfasts and I have learnt this particular recipe from her only. 


Today's Menu

Malai Bread Pizza

Ingredients:



Malai / milk' butter 1 cup
Sooji / rava / semolina 3/4th of the cup
2 Bread slices brown/ white
1 Onion cut in to small pieces 
1 Tomato cut in to small pieces 
1 small green capsicum cut in to pieces
salt to taste
butter/ oil for roasting

Method:

  • Take malai in to a bowl and add rava, onion, tomato, capsicum pieces in it.
  • Mix well and also add salt, keep it aside for 5 minutes.
  • after 5 minutes take a bread slice and apply this paste over it nicely.
  • Now heat a pan add a little bit of butter and keep a ready bread slice on it.
  • first roast the bread slice nicely from base, after that reverse it to the other side.
  • Roast it till it turns golden brown.
  • Your malai bread pizza is ready to serve.

P.S: you can serve it with some juice or tender coconut water.

Everyday Breakfast week- Day 1

Pals I'm starting a blog marathon "Everyday breakfast" in which I'll make one breakfast recipe everyday and will blog about it here....sounds interesting when I saw this kind of marathon on one of the blog I follow daily....so I thought to start it on my blog too....1st I'll go for a week then plan it for later days also. I haven't planned anything for this week too....I will go random. This is a Day 1 and here I go

EVERYDAY BREAKFAST DAY-1


Today's Menu


Veg-Aloo tikki burger


Ingredients:
Pav bun/burger bread
Boiled n mashed Potatoes (3-4)
Onion circles (1)
Tomato circles (1)
Salt as per taste
Red chilli powder
Tomato sauce
Butter (for frying tikkis/patties)
Cheese cubes for garnishing.




Method:

  • Take mashed potatoes and add salt, red chilli powder to it, mix well and make tikkis/ patties out of it.
  • Heat a non-stick pan and put some butter and slip all the patties in to it.
  • Fry it from both the side.
  • Put one patty on the base of pav- bun and put some onion circles and tomato circles over it.
  • Squeeze some tomato sauce on it and cover it with pav-bun.
  • Garnish it with some cheese and serve.......here is your burger ready to eat.
P.S: Well this is my way to make it...otherwise you can add some more ingredients whatever you like.My husband loved it and so I.

Have you tried it?


My hubby's friend told me about the different types of Maggie noddles they get in a small eatery in their hostel….I wondered what kind of Maggie(s). Then he told me about the chips Maggie….That filled some excitement in me and forced me to give it a try.

And I prepared my own Lays Maggie noodles.....



How to make it:-



 Lays Chips                +          Maggie noddles
  
                          




Prepare Maggie in a usual style,serve it in a noodles bowl and add some roughly crushed lays chips over it ...that's it!

Inspired By You...

Yesterday was really hard day for me...got sick and spent whole day on bed,surprisingly my parents came over to see me.... after meeting them half of the sickness of mine gone away.At night me and hubby were invited for a casual dinner,by one of us friend couple Manu and Shivani.We got ready to leave,by the time we were reaching to their place me and hubby had a small chit-chat fight in a car and it didn't end properly after reaching to their place.

The moment we entered in their house we both forget our fight just by seeing their home....which was kept so nicely and decorated with cute-cute smalls things.I like these kind of houses which are clean and kept nicely(point to ponder here is:nicely kept houses reflects some good part of the person's heart).I was so happy and only one word came out of my mouth and that was "beautiful"...in reply they said,"we got inspired by you..the way you use to keep the house".(actually we use to live in same kind of houses before moving to the current one) It was glad to listen that!...but after touring the entire place only one thought came in my mind and that was, now I'm inspired by you guys.

During the snack session they served us some awesome Cold-coffee and great looking Garlic-breads which were luscious and self-cooked by Shivani. Here is a small glance of it(though some of them were already in our stomach)











Everything was good I had a great time and discovered some new traits of the Good-Looking Couple. Thanks a lot guys really appreciate your hard work over this supper.



After leaving their house happily we went in search of our old pal the Rocky(rocky was our street pet dog when we use to live there) we looked for him through out the campus but we didn't find him. He might be hiding somewhere,so we decided to meet him next time and in this way we ended our pending fight also and at the end of the day we slept in peace.

Present...wait for it....ation !

Friday night was the party night,just another casual party...So I thought to make it interesting one.

A sms from my friend reached me in the afternoon saying,"are we partying tonight?"....after some minute I reverted it back saying,"Let me check with my husband, what he says".I tried to call him but the network problem which is bothering me from past 2-3 weeks didn't allow me to connect to him....whatever....So,I decided to call it the party day and messaged my friends to come-over for a blast and this is how it started.

5'O Clock in the evening I started thinking for the menu for the eve. I made a list in my mind and began with the main course, which was 'Malai Kofta'.....Ya I was cooking it for the first time, so bit excited for it.But there was something tastier in my mind and then I became functional for the starters.Hot summer season is in the town so the starter should be Chatpata and luscious.So here is the list...

Sevpuri
Chilly cheese Toast
Cheese Finger
Cheese Dip

Lolz it was the cheesy day!!!

Well in limited time these three were the good options to make.

Guest arrived on time and I wasn't ready with my starters...they were waiting for me and calling me to join them fast...I told them,"just wait for the surprise guys..there is something special" and the funny part was I didn't allow any of them to enter in the kitchen..in case they won't ruined my surprise and they were teasing me...Oh! God we were behaving like a kid...it was the real fun.

For the snacks...I was conscious about the presentation...Then I pulled out my beautiful glass tray from its cover and set it for the presentation...My guests were excited too and curious to know what is the special surprise....I kept them on wait for long...and then it's time.

I kept that piece of creativity on the table in front of them...and waited for the reaction....






My guest were very happy.....now tel what's your reaction... ;) :P
